Fennel Soup

Introduction:

Fennel soup is a fragrant, comforting dish that combines the gentle sweetness of fennel with savory, earthy flavors to create a smooth, satisfying meal. Known for its subtle sweetness , fennel brings a unique depth to soups, beautifully enhanced by creamy potatoes and aromatic onions. Perfect for chilly days, fennel soup is not only delicious but also packed with fiber, vitamins, and antioxidants. Whether you enjoy it as a light starter or a main dish with some dates, or crunchy bread, this fennel soup is a simple, nourishing way to bring warmth and elegance to your table.

ingredients:

  • 250g Fennel, peeled and cut into squares
  • 250g Carrots, peeled and cut into squares
  • 250g Potatoes, cleaned and cut into squares
  • 250g Onions, peeled and cut into squares
  • 25g butter
  • 2 tablespoons of cream cheese
  • Salt
  • 1 Cup of milk

Method:

- Take your vegetables and dice them then put them aside.

- In a pot, add the butter and let it melt.

- Add the onions and stir on medium heat until the onions are browned.

- Add in all your vegetables and stir over medium heat until they are browned.

- Add salt and stir, then add water until the vegetables are fully covered.

- Cover with a lid and let it cook over medium heat until all the vegetables are cooked through.

- Once your vegetables are cooked take them all out and add into a blender. Add in the remaining water that the vegetables cooked in.

- Add in your milk, cream cheese, and blend until smooth.

- Pour your soup into a bowl, garnish, and enjoy.

Notes:

- The consistency of the soup is dependent on the amount of liquid added. If you prefer a more liquidly soup then add in more water, and if you prefer a more thick soup try to decrease the amount of water added.

- In order for your soup to become more smooth then while it is blending remove the lid of the blender (if applicable) so that the air can enter and make it more smooth.

- Try to follow the recipe as well as possible so that there is no one flavor that overpowers another.

- Measure the amount of each vegetable after it is already peeled.

Enjoy! :)
