Moroccan cookies: Galettes

Ingredients:

  - 3 eggs (1 egg yolk reserved for brushing)

  - 150 g of granulated sugar

  - 2 tablespoons of honey

  - 250 ml of canola oil

  - 600 g of pastry flour 

  - 16 g of baking powder

  - The zest of one orange or any citrus 

  - 5 g of salt 

  - For the brush: Mix egg yolks with a little bit of milk 

Methods: 

In a bowl add the eggs, and sugar, and mix well.

In the same bowl add the salt, zest and mix well.

In the same bowl add honey, oil, and mix well.

Add the flour, and mix. The product should look soft but not runny. You should be able to roll it into a ball with your hands. 

Spray your baking tray with oil.

Take the dough and roll it in your hands and make a ball, try to make the balls same size.

Take the balls and tap it with your hands to flatten it just a little bit.

Brush the tops and sides of the balls with the egg yolk and milk mixture you have made.

Then, take a fork and create a cross on the top of the dough balls.

Cook the tray in the oven at 350F for 12-15 mins or until it is browned, and looks like the picture above.
